Last week, the new Four Pillars Laboratory opened in Surrey Hills, Sydney. The Australian Gin brand’s new space features a bar, lab, and retail space and is located in a 1930s building on Crown Street. Their distillery is located in Healesville, Victoria, just outside Melbourne.

Four Pillars new site features Eileen’s Bar and a Gin lab with an 70-litre copper still, also named Eileen after co-founder Matt Jones’ mother. The bar features a concrete bar with 20 stools and has the capacity to hold 60 people. There’s a cocktail list that features a variety of mixd drinks made using the Four Pillars expressions, as well as a snack menu. Visitors can also book gin, cocktail or distilling classes at the bar and the Gin Lab.

At the moment, visitor capacities are limited due to government restrictions due the Covid-19 pandemic.

“When we thought about what we wanted to bring to Sydney, we were determined to take that same passion for making, creativity and experimentation and focus it on the delicious drinks you can make with our gins,” explained Jones.

“And we wanted to serve it all up with our signature love of warm hospitality and beautiful design. The result is the Four Pillars Laboratory in Surry Hills, a delicious playground for Sydney’s gin lovers and a new bucket list destination for gin fanatics around the world.”

In other Four Pillars news, the brand will release their world-renowned Bloody Shiraz Gin on July 4. For the past five years, the Melbourne distillery has released the red grape-infused spirit annually, and it has become one of the most highly sought-after bottles on the market.

Each year, Four Pillars takes local Shiraz fruit and steeps the whole berries in high-proof gin for eight weeks before pressing. The color of the spirit remains a deep, rich, reddish purple. Aromatically it shows fresh pine needles, citrus, and spice, as well as distinct peppery, dense raspberry notes. The palate is balanced and sweet with a long juniper and spice character on the finish.
