Four Pillars Unveils Olive Leaf Gin

Four Pillars has added Olive Leaf Gin to its lineup. The new savory spirit from the Australian distillery has been infused with olive leaf and oil.

Four Pillars Olive Leaf Gin has been five years in the making. It all started with Cousin Vera’s Gin, a limited offering that the distillery made with their friends at Santamanía in Madrid, when they made their “first foray into savoury, Mediterranean-inspired gin flavours.”

“After visiting Cobram Estate during olive harvest in 2019 we realised olive oil could be a brilliant botanical alongside olive leaf,” explained co-founder and distiller Cam Mackenzie. “The aroma, flavour and texture of fresh olive is stunning, and we did an entire year of trials before finalising the recipe for this gin.

“These trials landed us on our final mix of Olive Leaf Gin botanicals: a big base of juniper with a savoury overlay of coriander seed, rosemary and bay leaf from my backyard, olive leaf, olive oil, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit.

“We have used olive leaf and oil from the picual, hojiblanca and coratina varieties, all harvested at Cobram Estate, which we know is one of the greatest extra virgin olive oil producers in the world, and fellow Victorians.”

Mackenzie describes the resulting Gin as “savoury, textural, bright and perfect for any Martini.”

Olive Leaf Gin will be available across Australia come September 2020, and will be priced at $85 AUS ($61 USD) per 700ml bottle. Beginning in October 2020, the Gin will hit a variety of global markets, including the United States,  The gin will also be available in select global markets from October 2020, including the US, New Zealand, Singapore, Hong Kong, Thailand, and Vietnam, with Europe coming in April 2021.

In June, Four Pillars opened a new bar, lab and retail space in Surry Hills, Sydney, and then released a new batch of their Bloody Shiraz Gin in July.
