Pan Pacific London Opens Destination Cocktail Bar, Silverleaf

Silverleaf, a new destination cocktail bar, is set to open at Pan Pacific London in February 2022. The new bar is inspired by ‘naturalism and the elements’ and is the brainchild of a group of creative people led by the hotel team and drinks industry experts; Chris Tanner and Simo, also Director of Bars and Managing Director of Milroy’s respectively, and Liam Broom; former Bar Manager at Callooh Callay. Chris will be Silverleaf’s General Manager, whilst Liam will take up the role of Bar Manager.

Located in the 144-year-old Devonshire House, a separate building adjacent to the hotel and in the heart of Pan Pacific London’s estate, Silverleaf is one of the first independent cocktail bars to be part of a luxury hotel’s offering. Dedicated to giving guests a full sensory experience with incredible views over Bishopsgate Plaza and forward-thinking cocktails, the bar will include a semi-private area and Alba; a separate intimate space, that accommodates up to 12 people and is designed for private drink experiences as well as being home to a bottle-keep for customers.

Pan Pacific London has collaborated with Design Research Studio; the design, interiors and innovations  agency at the heart of Tom Dixon, to create bespoke lighting, furniture and accessories as well as oversee the vision and development of Silverleaf’s brand identity. The selection of materials used within the space mirror the elements’ core natural and tactile qualities such as blackened hot rolled steel, marble, charred timber and salt-glazed hand-crafted British bricks. Standout design features  include a one-off live edge timber table, bespoke tables carved from solid marble blocks as well as the  whisky nosing glasses from Tom Dixon’s extraordinary PUCK range, which were developed especially  for Silverleaf. 

On arrival, guests will be greeted by a breathtaking animated, polished stainless steel light sculpture designed and custom-made by Design Research Studio. A temperature-controlled gold display cabinet is situated in the turret of the bar and is home to high-value bottles. The bar stretches the length of the room and is built from a striking split-rock edge face marble. The expansive collection of rare international spirits is carefully curated by Simo, who has used his years of knowledge and relationships with premium distilleries and distributors.

Silverleaf’s drinks menu, which has also been designed in collaboration with the Tom Dixon team, continues to take influence from ‘naturalism’. Each cocktail champions two or three core ingredients, from those which are unusual and have been foraged to those which are more easily accessed. The team want to highlight products that are recognisable to their guests yet presented in new and unimagined ways.

The Silverleaf team uses progressive processes to enhance flavour profiles and create in-house  ingredients, which are clarified and pre-batched. Drinks are divided by a distinctive symbolic language through flavour profiles and are represented through unique geometric colour profiles. The drinks will have a minimalist presentation with a touch of vibrant colour along with edible garnishes.  

Drinks examples include the Heartleaf Martini (Haku Vodka, Seaside Distillate, Heartleaf, Dry Vermouth), Grape + Spruce (Suntory Toki, Grape Skin, Birch, Spruce), and Watermelon + Umami (Tanqueray 10, Watermelon, Umami Vermouth, Sake).

“When the opportunity arose to open a cocktail bar in partnership with Pan  Pacific London, we leapt at the chance, as it has allowed us a new channel for creativity,” explained Chris Tanner. “We’ve taken  the elements that we know work – curation, hospitality, and training – and applied them to a diverse cocktail offering, opening up the possibilities of what we’re able to do away from whisky.”
