Sullivans Cove has unveiled American Oak Tawny Single Cask TD0309. Distilled in August of 2008 and decanted in March of this year, the 13.5 year-old Australian whisky was matured in a single 300L American oak cask previously used to mature Australian tawny fortified wine. Bottled at 47.5% ABV, just 439 bottles have been produced.
“The force and flavour that this American Oak ex-Tawny cask provided is not to be understated, but there is even more to say of the oiliness and relentless chewy return of the Sullivans Cove spirit,” said Miranda Lidgerwood, Sensory & Marketing. “This is a whisky with serious backbone and a broad, rich flavour profile. Sullivans Cove spirit, brought to you in the wrappings of toasty Australian tawny, and 13 years of careful maturation. Both of these fighters refuse to go down, and the bell just keeps tolling. Another round!”
On the nose, the whisky is dark and brooding. Storm clouds of Dutch cocoa powder loom over an engine oil ocean. Notes of chocolate covered goji berries mingle with rum, wine, tobacco, candied ginger, glacé cherries, and brown sugar syrup, which rest atop a base of golden kiwi, sesame crackers, and raw peanuts. The palate delivers oak and tannin from the Tawny cask, alongside chocolate covered popcorn, rosehip oil and cappuccino foam, which sit above a bed of autumn leaves and chewy malt. The finish is extremely generous in length with Medjool dates, roasted hazelnuts, and dark chocolate arriving alongside green peppercorn and toasty notes.
The ballot for Sullivans Cove American Oak Tawny Single Cask TD0309 will open for 24 hours from 10am Hobart time on Tuesday 26th of July. The whisky is priced at $400 AUD and only one entry per person is permitted.
